Like I said before, I have an '89 DX that I am stripping. I don't have a sunroof, and the interor is pretty ratty, but it will work. If anything, you can cover a replacement panel with a new piece of cloth. Remember, you are working on a 20 year old car. There are certain concessions you have to deal with.
It sounds like someone already took out the headliner and replaced it with whatever they had lying around. When I replaced my Integra's hatch, I had to remove the headliner. It was basically a big piece of particle board with a piece of vinyl glued to it. Mind you this was a 1995, not an '89, but the design hasn't changed that much. When I get to actually taking apart the interior, I will let you know more about my CRX and what is salvageable. That should be happening within about three or four weeks (when we hear about our acceptance to the 24 Hours Of Lemons).
As for other cars, any CRX from 1988 to 1991 will work. The older CRXs (1987 and earlier) are too small and the Civics from that cycle are too long. You could always trim a Civic headliner to fit, but I don't know if the sunroof will line up. The front of the cars are mostly the same, so I don't see why this wouldn't work. If you go this route, measure twice, cut once.
